i just made the pine needle sorbet for work and strangely enough it turned out green- or perhaps, not so strangely. the photo featured in Uchi is of this precious little quenelle of a pale sorbet with specks of green... i followed the recipe to a t, yet it yielded a bright green pine needle sorbet. have you tried making it yet?
