THE BLUE CHAIR JAM COOKBOOK by Rachel Saunders

I had seven fig trees on my property in the south of France. Two green fig trees and five red fig trees. And they would be ripe all at once....offering an abundance of fresh figs. I'd spend days jamming them, and fell madly in love with this yearly ritual. My fig jam made its way into gift baskets, air mail packages to friends, into my cupboard and that of my neighbors. Into cakes and glazes for fish.

So it was with great anticipation that I opened the first pages of The Blue Chair Jam Cookbook. I discovered a kindred soul. Rachel Saunders, the author, feels the same way about fruit as I do about fresh figs. (In fact, one of the very first pages is of Rachel reverently breaking open a fresh fig!) So much so she founded a company called Blue Chair Fruit that makes fruit jams and preserves and spent ten years doing research for this cookbook.

Right off, the first thing I appreciated as a jam maker is that the book is divided up into recipes for each season, with an introductory section that thoroughly explains techniques and the equipment needed.

So you see, this is a book you can enjoy for its prose as well as for its lovely photography and recipes for jam.

I can't wait to try them all. Early Girl Tomato Jam. Italian Prune & Cardamom Conserve. Strawberry-Marsala Jam With Rosemary. Black Fig & Candied Citrus Jam!

This is a large, heavy, complete cookbook on jam making that I will be using for years and years. I just wish I still had my seven fig trees now!!

Candied Orange Peel

Ingredients:

4 sweet oranges, such as Navel or Valencia

4 1/2 cups white cane sugar, plus more for dredging

2 cups water

Method:

1. Halve each orange crosswise and juice it, saving the juice for another use. Place the orange halves in a medium non-reactive saucepan and cover amply with cold water. Bring to a boil over high heat. Reduce the heat to a lively simmer and cook for 10 minutes. Drain, discarding the water. Repeat this process once or twice more, depending on the thickness and bitterness of the rinds.

2. Return the orange halves to the saucepan and cover them with cold water. Place the pan over hight heat and bring to a boil. Turn the heat down to a lively simmer and cook, partially covered, until the orange halves are tender, 30 to 60 minutes. Drain the halves.

3. When the oranges are cool enough to handle, take each half and, cradling it in one hand, use a soup spoon to gently scrape its interior of excess pith and fibers. Repeat with the rest of the halves, going around each one two or three times until its interior is smooth and its rind is a uniform thickness. There should be a think layer of white pith still attached to the rind when you are finished.

4. Slice each scraped orange half into 1/4 inch strips and place the strips into your saucepan. Add the sugar and water; the fruit should be submerged. Bring the pan to a boil over high heat, then reduce the heat to a gentle simmer. Cook, without stirring, until the undersides of the rinds appear semi-translucent and the liquid is syrupy and forms a swell of foaming bubbles, approximately 1 hour.

5. Turn off the heat and let the rinds and syrup cool for 30 minutes. Using a slotted spoon, remove the rinds to a wire cooling rack, positioned over a tray or cookie sheet. As soon as the rinds are cool enough to handle, carefully separate them and spread them evenly over the rack.

6. Leave the rinds until dry to the touch, 1 to 2 days. Toss them in sugar and store in an airtight container.
